Kahlua, Warm Spices, Orange, Coffee and Pine nuts! These are a few of my favorite things!



 








Coffee, Kaluha, oranges, roasted pine nuts and spices. The perfect blend for warm, summery cookies. Enough said.


 Ingredients

  • 1/4 cup unsalted butter, at room temperature
  • 1/4 cup olive oil
  • 1 and 1/4 cup  brown sugar
  • 4 tbs Kahlua
  • 2 teaspoons of coffee
  • 1 teaspoon ground fennel seed and whole anise
  • Rind of one small orange
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 1/4 cups all-purpose flour
  • 1/4 cup pine nuts

Directions


Roast the pine nuts with the spices. Once toasted, remove the anise and add butter to the hot pan and let it melt gently. Pour into a mixing bowl and add the oil, coffee and orange rind. 






Whisk in the sugar and Kahlua.



Fold in the eggs and the four.
Transfer the dough to a sheet of plastic wrap. Shape the dough into an 8-inch-long log. Wrap the dough in plastic and refrigerate for 2 hours.


Preheat the oven to 350 degrees F. Line heavy large baking sheets with a silpat or parchment paper. Cut the dough log crosswise into 1/8 to 1/4-inch thick slices. Transfer the cookies to the prepared baking sheets, spacing evenly apart. Bake until the cookies are golden around the edges, about 15 minutes. Toss in brown sugar and orange rind.
