Mocha Mousse and Chocolate!
















I am in Dubai now with my Etta (brother), my Chechi (sis-in-law), and my Nonu (Nayanika, my niece).  My niece is the most adorable little baby girl.  I am so in love with her!  She has such a darling smile, and those dimples, oh, those dimples! Sigh! I could go on about her. It feels amazing to be here with my family. It's this calm, peaceful feeling. All the love, laughs, hugs, kisses and comfort in world, it's the best feeling ever. 
 Last night I made a dense chocolate cake to celebrate all this happiness. The cake came out dark and rich almost like a brownie but I still think the recipe needs to be tweaked a little for it to be perfect so I won't be posting the recipe for this one. The mousse frosting is my fail proof frosting, I use it all the time. It's easy and it takes only a couple of minutes to prepare. For the frosting you need to just fold 200 grams of melted milk chocolate into 285 grams of cream. Whisk it all till it becomes light and soft. It sets when it is refrigerated. So frost a cooled cake and pop it into the fridge for an hour or two minimum. I added a bit of coffee powder and sugar to make it a mocha mousse frosting. 
So Hey! I am planning to start my catering company again! So exciting! I am still at the conceptualizing phase. My old company was fun but it got hectic juggling my final semester college projects and the company. I really want to make this new venture a little more exciting and fresh. I am thinking of ideas and I am open to suggestions so do let me know what you think.  All suggestions are valuable.  And Hey! Thanks to all my blog followers for all the much needed support and encouragement to start the company back again.
