Paneer and Some Lovin'





Sometimes, you forget to breathe. There are days when you wake up, wishing it was the weekend already, and for a person who works from home, the weekend feels just like another weekday, and the week never seems to come to a full stop. Days run into months, and months to years, and you have no idea where all that time went. Sometimes, you forget to call the people who are most important in your life, but you don’t realize that just one call and a few minutes of your day could change your entire week around. Most of the time it’s not because you don’t want to call, it’s because you can’t; but at the end of the day, when the calls have been made and love has been shared, you realize that the mundane chores and the taxing amounts of work , the fights and the struggles, all mean something. When focusing on Mondays, Tuesdays or even Thursdays we lose sight of the bigger picture. We forget that we’re young and have the rest of our lives in front of us. So, when you cook your meals and drink your cup of green tea, or crash into your couch at the end of the day, you know that your fights and struggles, your living and breathing means the entire universe to the one you love.

Back to food! So, when your days do get busy, the first thing you think of is getting a McDonalds burger or if you’re trying to be healthy you just realign your body to the next counter at the food court which happens to be Subway and you feel like you did your body a world of good. But, I find cooking to be very therapeutic. When my day ends up getting busier, the more I feel like cooking. It doesn’t take much of your time really. You can make an entire meal in less than 15 minutes; and this is how:

·         Chop some onions and fry them in a teeny weeny bit of olive oil


·         Add chopped up tomatoes and bell peppers to the onions



·         Add about 1 and a half tablespoons of peanut butter.


·         Add 2 tablespoons of garlic and chilli spread (I use the FunFoods variety which is really good!)


·         Cook for about a minute and on the side you can start making your chapattis (I use the packets of half cooked chapattis as it saves a lot of time and you don’t end up wasting a lot of dough)
·         Back to the curry; add 1/4 cup of water and stir
·         Add a slab of paneer cut up into chunks; don’t overcook the paneer as it makes it dry and crumble.

·         I’d say you should just cook it for about 2 minutes and it’s done!

·         Chop up some fruits on the side to make a nice little fruit salad for desert
·         And there it is; your entire meal! DONE!
